Agave angustifolia
Espadín
It is the agave with the greatest presence in cultivated areas and shows excellent adaptation to various planting regions. This agave boasts the highest production volume due to its short cycle from planting to maturity (6-8 years). The size and weight of its piña contribute to higher sugar yields, making it the ideal agave for mezcal production.

Agave potatorum
Tobalá
The short and sweet agave is primarily distributed in the northern area of Oaxaca and southern Puebla. It thrives in arid and semi-arid regions with abundant vegetation or rocky terrain. This results in a mezcal with mineral and herbal aromas. The maturation time of an Agave potatorum is 12 to 15 years.

Jabalí
It is a wild agave distributed in mountainous desert areas. Its maturation time is 20 to 25 years. Its fermentation is complicated and may go through up to three fermentations due to its high saponin content. However, it is worth it for the exotic flavor that results from this distillation.
