The process begins with the careful selection and harvest of the agave. In our company, only mature agaves are chosen, grown in the fields of the Oaxaca region. The jimadores, with their experience transmitted from generation to generation, select and cut the agaves with precision, respecting the time and optimal maturity of the plant.

Once harvested, the agave hearts, known as piñas, are transported to traditional volcanic stone conical ovens. There, the piñas are slowly cooked over several days, using mesquite firewood or other selected woods. This slow, controlled cooking process allows the sugars in the agave to caramelize, providing complexity and depth of flavor to the mezcal.

After cooking, the agave piñas are transferred to tahonas or stone mills, where they are crushed to extract the sweet and fibrous juices of the agave. In our company, we prefer traditional grinding with lava stones or granite, which preserve the natural flavors and aromas of the agave.

The agave juices obtained from grinding are transferred to large wooden vats for fermentation, where natural spring water is added and the natural yeast present in the environment is incorporated. For several days, the yeasts ferment the sugars of the agave, transforming them into alcohol and producing the characteristic flavors and aromas of mezcal.

Once fermentation is complete, the resulting liquid, known as must, undergoes a distillation process in traditional copper stills. At our company, we distill the mezcal twice to obtain greater purity and smoothness in the final product. During distillation, undesirable components are separated and the characteristic flavors and aromas of mezcal are concentrated.
Finally, before being bottled, the mezcal goes through a filtering process to eliminate impurities and obtain optimal clarity. This final filtration guarantees the quality and purity of the product, ready to be enjoyed by lovers of good mezcal.
